The Dexter-Russell S125 Sani-Safe is a 4-1/2 inch stiff sliming knife with a wide flat DEXSTEEL blade and a textured white polypropylene handle. The blade is ground stiff and broad rather than tapered, giving you the geometry to scrape rather than slice – lifting scales, slime, and viscera out of fish bellies in single passes.
