A rolling cutter works by dragging, which is why it pushes toppings toward the edge of the slice. A rocking blade works by pressing straight down, and at 16 inches it spans an 18-inch pie in a single stroke. The difference is visible on the plate.
Two polypropylene handles let you load the blade evenly with both hands, and the blade itself is stiff enough not to bow under that pressure. It is the standard tool behind a pizza counter for a reason: it is faster than a wheel and it does not need to be sharpened as often, because it is not being dragged against a peel or a screen.
