Offset is the important word. The blade steps down from the handle, which does two things: it keeps the hand clear of a hot surface, and it lets the leading edge sit flat on the griddle rather than at an angle, so it goes under food instead of pushing it.
At 5 by 4 inches this is a wide blade — enough to carry a large burger, a chicken breast or two eggs at once without folding them. Paired with the high-heat handle it is a grill-station tool rather than a general kitchen spatula.
