Portioning steaks is heavy, repetitive work done in single forceful strokes. The cimeter’s deep belly and forward mass are what carry the blade through the grain, and the upswept tip keeps knuckles off the board on the pull-through.
The SofGrip handle is the difference from the hard-handled Sani-Safe cimeter. It holds grip when hands are wet with fat and blood, and it damps some of the shock that otherwise goes straight into the wrist on every cut.
