A three-piece set of the Sani-Safe scalloped parer, Dexter item 15423. Each blade is 3-1/4 inches of DEXSTEEL high-carbon steel with a ground scalloped edge, and each handle is moulded directly onto a full tang so there is no join where moisture can sit.
Three parers is a prep-station quantity rather than a drawer quantity — one for fruit, one for vegetables, one for the jobs that leave a smell behind. In a kitchen that runs a garnish or salad station, having them in a set means the spares are already there.
Dexter-Russell has been making knives in Southbridge, Massachusetts since 1818. Its Sani-Safe line carries NSF certification for foodservice use.
